Dear Mr. Nich01s: I have oompleted the meat survey which you reoent1r regl ested me to make e.nd hereu report my find1.ngs end make certain recommenda- tions~ Of the 25 meat markets contRsted by me I find a. total of 50 cattle and 120 hogs 01' the urd.nspected class are 'being so1d BJ:1d con~med each month in the city. Should a standard inspect1.on fee of 25~ for each beef ~d eacn hog be oharged we w~ld realize an income of $42.50 each month to be used to he1p det"ray the ex- penses of a meat inspector. It is my opinion that this given poss1- bi1ity of a change ~n the ameant of un1ns~ected meats being con- sumed afte~ the ~assage of a meat inspection ord~ance. Qp~nions vary conside:rabl~ on 'this l'oint. I believe tat:: least 50% or the total amount of uninspected nests now being used will be o~t of1' with the p.ssage of a meat ~nspection ordinance. Howeve~, it ~s entire17 possible that ~ch au ordinance would inspire sone in- dividual to ~nsta11 a slaughter h~se in or near the oity and there- b1 stimulate a sale o~ locally raised meat as well as furnish employ- ment for a number o~ people. ~bould t~s angle develop then the fees would increase proportionately ~th the saJ.e of thie type o~ meat. Should the inportation of locally raised meats be sbut of1' and a slaughter house not be bu1.1t and operated we would then face the possibl1~ty of a raiso in prioe or all inspected meats sold by the packers. In any event, the income from meat inspection would fall oonsid~rably Wbort of paying the e~penses of a full time inspec- tor. However, it may be poss1ble to insta1l a weights and measure :inspection to be conduoted in conjunotion with the l11eat inspeotion de];>artment.
